This post won't be TOO long (somehow, every time I say that, it is. lol). And it's actually a bit rushed, since Cinco De Mayo is tomorrow and Mother's Day is this coming Sunday. But I hope y'all enjoy it.
So, starting with Cinco De Mayo.... Something I did not know: It's celebrated more in the United States than in Mexico. Of course, us Americans do love a good excuse to get drunk and pretend it's about heritage. lol. For more information on Cinco De Mayo, check out this site.

When most people think of Mexican food, tacos spring to mind. You can fill a taco with just about anything from seasoned ground beef (or Vegetarian crumbles [I like Beyond Meat Feisty Crumbles]) to fish (Gardein fishless filets or Sophie's Kitchen Breaded Vegan Fish Filets) to seasoned sauteed mushrooms to beans. Mother's Day. First, let me apologize for how little is here. When doing research for this, I was surprised to find there aren't a lot of links (especially for Veg-friendly recipes). But it makes sense. After all, no two mothers are exactly alike.
