This post won't be TOO long (somehow, every time I say that, it is. lol). And it's actually a bit rushed, since Cinco De Mayo is tomorrow and Mother's Day is this coming Sunday. But I hope y'all enjoy it.
So, starting with Cinco De Mayo.... Something I did not know: It's celebrated more in the United States than in Mexico. Of course, us Americans do love a good excuse to get drunk and pretend it's about heritage. lol. For more information on Cinco De Mayo, check out this site.
Here are a bunch of Vegan recipes (ranging from bean dip and guacamole to empanadas and chimichangas to Mexican wedding cookies). And here are 35 Vegetarian Recipes for Cinco de Mayo (+ 10 Bonus Margarita Recipes).
When most people think of Mexican food, tacos spring to mind. You can fill a taco with just about anything from seasoned ground beef (or Vegetarian crumbles [I like Beyond Meat Feisty Crumbles]) to fish (Gardein fishless filets or Sophie's Kitchen Breaded Vegan Fish Filets) to seasoned sauteed mushrooms to beans. But here are 9 Vegetarian taco recipes to get you thinking outside the box.
Here are some recipes for Mexican-style "Chorizo" (I grew up on the real stuff, which is tasty but scary!). One is tofu-based, and this one is seitan-based.
Another tasty Mexican food is tamales! Here is a recipe for cheese-filled ones. And here are some Vegan tamales ("beef" filled, black bean and pepper filled, spinach and garlic filled, and pumpkin and rice filled).
Want a tasty Mexican soup? Try Albondigas.
What if you're more of a Chipotle Mexican Grill fan? Here's a copycat for their Sofritas (yes, I did share this way back when I first started this blog) and their Vegetarian Black Beans.
And to decorate? Here are 10 DIY ideas (some are better than others). And some cute mini-piñatas.
And that's it for Cinco De Mayo. Now on to....
Mother's Day. First, let me apologize for how little is here. When doing research for this, I was surprised to find there aren't a lot of links (especially for Veg-friendly recipes). But it makes sense. After all, no two mothers are exactly alike.
Here is a list of 59 Brunch recipes (many of them Vegan), ranging from sweet to savoury. And this list gives a few (Vegan) recipes for breakfast, lunch, and dinner. That said, you know your mom best. So if you plan to cook for her, make her favourite foods (whatever they may be)!
Here are 15 homemade Mother's Day cards. Most of them are truly adorable!
Do-It-Yourself gifts are often cheaper than anything you can buy in a store. But more importantly, they're more personal! Here are 28 gift ideas. And here are 25 more. The important thing is to keep your mom's tastes in mind, regardless of whether you make or buy a gift.
And MOST importantly, remember that your Mother just wants to feel loved and appreciated. So show her how much she means to you. A visit or even a call can really mean a lot.
To all the mothers out there, have a wonderful Mother's Day!
